One of the ways I try to keep the boys interested in healthy food is by letting them chose the ingredients for salads. They love to help with food prep like chopping and mashing. Now that they are old enough to set the table and lead family prayers, I’ve given them each a kid safe plastic knife that is sturdy enough to cut a tomato or slice through romaine lettuce. They have a very good understanding of what is and isn’t appropriate to cut since we only pull out the knives when they are seated at the kitchen island with their special cutting mats out. It have built a foundation for them to learn where our food comes from and hopefully one day will lead them to make wise food choices on their own. One of the boys favorite salads is FRUIT SALAD, YUMMY YUMMY. (yes, we used to sing along with the Wiggles….) Here’s our version but you can be as creative as possible so the ingredients are up to you.
1/2 watermelon
2 organic apples, one green and one red
1/2 cup organic seedless grapes
2 organic oranges
1/2 cup fresh large grated coconut
3 springs of fresh mint
1/2 teaspoon of ground cinnamon
Chop all the fruits into bite size pieces and add to your serving bowl. Sprinkle with coconut, chopped mint and cinnamon. Give it a quick stir to blend and let it rest for 5 minutes before serving, if you can wait that long… Enjoy!
