When I was younger, we always had cake for our birthdays. Each one of us had a favorite flavor and to be sure, my dad’s favorite cake is coconut cake. It was my grandmother “Granny Goose” who would bake a delicious fluffy three-tiered cake dripping with butter creme frosting and coconut. These days, my dad lives clear across the country from me and we don’t get to spend his actual birthday together every year but for this one, I’ve decided to bake my version of his favorite cake. So, I thought I would share this special recipe with my friends.
Dad’s Coconut Cake
2 1/2 cups gluten-free flour
1 cup coconut sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon pink Himalayan sea salt
1 cup shredded unsweetened coconut
1 1/2 cup coconut milk
1/2 cup warm water
5 tablespoons of organic applesauce (no sugar added)
1 tablespoon lemon juice
1/2 teaspoon of vanilla
In separate bowls combine all of the dry and all of the wet ingredients. Then, mix together all ingredients until it is free of any lumps. Pour the batter into two parchment lined round pan. Bake the cake in a preheated oven at 350 degrees for 25-30 min, and set a side to cool completely before removing it from the pan. It can be frosted with a simple buttercream or simply serve with fresh berries.
