Goodness granola is a family recipe. Like many things in our family, it has been passed down verbally and through experience rather than by a written recipe card tucked neatly into a small box nestled in a kitchen cabinet but that is changing.
My mom Dorothy recalled making her first batch. “It was a chilly winter morning and nine girlfriends were preparing for a prayer group meeting. The kitchen was bustling- grated organic apples, warmed molasses, coconut sugar and maple syrup over the fire and tossed the gluten free oats with cashews, almonds and seeds before baking them low and slow”, and her mind turned back to memories of a bowl of crunchy savory granola with a side of fresh yogurt she had enjoyed with her daughters years before.
The way it warmed a person from the inside out. And that is the same recipe we share with you.
3.5 cups gluten free oats
1 T cinnamon
1 tsp ginger
1/4 c flax seed
1/2 c cashew pieces
1/2 c almond pieces
1/4 c pepita seeds
1/4 c sunflower seeds
3/4 c grated apple
1/4 c brown sugar
1 c honey
1/4 c maple syrup
1/2 c coconut oil
Mix wet ingredients with brown sugar and warm to melt.
Mix all dry ingredients.
Blend all together and spread on parchment lined cookie sheet.
Bake @118 degrees for 2 hours on 2 regular sized baking sheets/ 250 degrees for 1 hr 25 min on 1 small baking.
Cool 20 minutes.
Enjoy!
To this day, as I search spice markets for the best ginger and the warmest cinnamon, I try to share the goodness of that memory with my family and my friends. I hope you will enjoy making it with your family.
